“Scrumptious Shrimp with Sweet and Sour Pineapple Sauce”

Ingredients<:

  • 3 pounds medium shrimp, shelled
  • 1 cup flour
  • 2 teaspoons salt
  • 4 eggs, beaten
  • ¼ cup Sun Zen Gourmet Olive Oil
  • 1 cup water
  • 1 tablespoon cornstarch
  • 2 16-ounce cans pineapple chunks, drained

Sauce:

  • 6 tablespoons brown sugar
  • 1 cup Sun Zen Pineapple Island Sauce
  • 4 tablespoons white vinegar
  • ½ teaspoon salt
  • 4 tablespoons ketchup
  • 5 drops Tabasco Sauce

Directions:

  1. In a large bowl, combine flour and salt. Stir in beaten eggs and mix well to form a thick batter.
  2. Add shrimps to this thick batter, covering each shrimp completely.
  3. Place shrimps in a large skillet and fry in Sun Zen Olive Oil 3-5 minutes, until golden brown.
  4. Place fried shrimp on serving platter and garnish with pineapple chunks.
  5. Combine sauce ingredients: brown sugar, Sun Zen Pineapple Island Sauce, vinegar, ketchup, Tabasco sauce, and salt in a medium saucepan. Bring to a boil over medium heat (takes approximately 3 minutes).
  6. Once the other ingredients are boiling, add the cornstarch and water. Stir for 2 minutes until the sauce thickens, and then remove the sauce from the heat.
  7. Pour sweet and sour pineapple sauce over the shrimp and pineapple chunks. Serve with hot fried rice.
