“Scrumptious Shrimp with Sweet and Sour Pineapple
Sauce”

Ingredients<:
- 3 pounds medium shrimp, shelled
- 1 cup flour
- 2 teaspoons salt
- 4 eggs, beaten
- ¼ cup Sun Zen Gourmet Olive Oil
- 1 cup water
- 1 tablespoon cornstarch
- 2 16-ounce cans pineapple chunks,
drained
Sauce:
- 6 tablespoons brown sugar
- 1 cup Sun Zen Pineapple Island Sauce
- 4 tablespoons white vinegar
- ½ teaspoon salt
- 4 tablespoons ketchup
- 5 drops Tabasco Sauce
Directions:
- In a large bowl, combine flour and
salt. Stir in beaten eggs and mix well to form a thick batter.
- Add shrimps to this thick batter, covering
each shrimp completely.
- Place shrimps in a large skillet and
fry in Sun Zen Olive Oil 3-5 minutes, until golden brown.
- Place fried shrimp on serving
platter and garnish with pineapple chunks.
- Combine sauce ingredients: brown
sugar, Sun Zen Pineapple Island Sauce, vinegar, ketchup, Tabasco sauce, and
salt in a medium saucepan. Bring to a boil over medium heat (takes
approximately 3 minutes).
- Once the other ingredients are
boiling, add the cornstarch and water. Stir for 2 minutes until the sauce
thickens, and then remove the sauce from the heat.
- Pour sweet and sour pineapple
sauce over the shrimp and pineapple chunks. Serve with hot fried rice.
