“Spanish Tortilla Squares”
Prep Time: 15 Min
Bake Time: 15 Min
Servings: About 4 dozen Squares
Ingredients:
- 6 eggs
- 2 tablespoons half-and-half, light cream, or milk
- 1/2 teaspoon salt
- 1/4 teaspoon Habanero Garlic Pepper
- 1 tablespoon Sun Zen Gourmet Olive Oil
- 1 tablespoon butter
- 1 cup coarsely chopped fresh mushrooms
- 2 cloves garlic, minced
- 2 cups frozen loose-pack diced hash brown potatoes with onions and peppers
- 1/4 cup snipped fresh chives
Directions:
- Preheat oven to 450 degree F. Grease an 8x8x2-inch baking pan; set aside. In a medium bowl, whisk together eggs; half-and-half, cream, or milk; salt; pepper; and saffron. Set aside.
- In a large skillet, heat Sun Zen Gourmet Olive Oil and butter over medium heat until butter is melted. Add mushrooms and garlic; cook for 1 minute. Stir in potatoes. Cover and cook over medium-low heat about 10 minutes or until potatoes are lightly browned and tender, stirring occasionally. Remove from heat and stir in chives.
- Spread potato mixture evenly into prepared baking pan. Pour egg mixture evenly over potato mixture, pressing down lightly with the back of a spoon to completely cover potatoes. Bake, uncovered, about 15 minutes or until set and top is golden (center may puff during baking, but will fall during standing time). Remove from oven; let stand 5 minutes. Cut into 1-inch squares. Serve warm.
“Picadillo Salsa”

Servings: Makes about 3 Cups
Ingredients:
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 2 medium tomatoes
- 1 medium apple
- 1/3 cup raisins
- 1/4 cup toasted slivered almonds
- 6 thinly sliced, pimiento-stuffed olives
- 1 tablespoon Sun Zen Habanero Garlic Pepper
- 1 tablespoon Sun Zen Sweet Red Pepper Sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/8 teaspoon ground cloves
Directions:
- In a large skillet cook ground beef, onion, and garlic until meat is brown and onion is tender, about 5 minutes. Drain off fat.
- Meanwhile, peel and chop tomatoes. Peel, core, and chop apple. Stir tomatoes, apple, raisins, olives, Sun Zen Habanero Garlic Pepper, Sun Zen Sweet Red Pepper Sauce, sugar, salt, cinnamon, cumin, and cloves into the beef mixture. Cook covered over low heat for 20 minutes. Stir in the toasted almonds. Cook uncovered for another 2 minutes. Serve warm with large corn chips or tortilla chips.
