“Make Ahead Summer Seafood Bites”
Prep Time: 15 Min
Yield: 60 Servings
Ingredients:
- 1 pound cream cheese, softened
- 1 tablespoon lemon juice
- 2 teaspoons light cream
- 1 teaspoon chopped onion
- 1/2 teaspoon Sun Zen Gourmet Rosemary & Garlic Herb Seasoning
- 1/4 teaspoon Worcestershire sauce
- 1 can (6.5z/184g) tuna, liquid
removed and flaked
- 1 can (4oz/113g) shrimp, liquid
removed and minced
- 1 can (104g) smoked oysters,
liquid removed and minced
- 60 Melba rounds
Directions:
- In bowl, combine cheese, lemon
juice, cream, onion, Sun Zen Rosemary & Garlic Herb Seasoning and
Worcestershire sauce; divide among 3 small bowls.
- To first bowl, add in tuna; mix
well.
- To second bowl, stir in shrimp;
mix well.
- To third bowl, stir in oysters;
mix well.
- Using piping bag or teaspoon, pipe
or possibly mound mix in 1-inch rounds onto baking sheets. Freeze until hard;
store in airtight containers in freezer.
- To serve warm, place frozen mounds
on Melba rounds; bake in 375F (190C) oven for 10 min or possibly until bubbly.
To serve cool, thaw and spoon into Melba rounds or tomato-basil crackers.

Prep Time: 15 Min
Yield: 12 Servings
Ingredients:
- 1 pound sliced pepperoni
- 1 pound sliced salami
- 1 jar pepperoncinis, drained
- 2 cups grape tomatoes
- 1 pound provolone cheese, cubed
- 1 pound mozzarella cheese, cubed
- 1 jar pitted olives, drained
- 1 bottle Sun Zen Gourmet Parmesan Garlic Dressing
- 12 Skewers
Directions:
- Combine pepperoni, salami,
pepperoncinis, grape tomatoes, provolone cheese and olives in large bowl or
plastic bag. Coat with Sun Zen Parmesan Garlic Dressing and allow refrigerate
overnight.
- For serving, remove from
refrigerator and alternate the different ingredients on each skewer so each
skewer has a nice balance of color and texture.
- Serve skewers on a leaf-lined tray
and with sliced French or crusty bread.
