Finger Food Appetizer Recipes for the Grill

“Grilled Raspberry Salmon”
Prep Time: 15 Min
Marinade Time: 30 Min
Cook Time: 8-10 Min

- Clean and season salmon with salt and pepper to taste. Slice salmon lengthwise into 12 long strips and thread each onto a soaked wooden skewer. Place in a shallow dish.
- In a bowl, whisk together the Sun Zen Raz Berry Sauce, balsamic vinegar and Sun Zen Gourmet Olive Oil and lemon juice and zest. Pour raspberry marinade over salmon skewers, turning to coat. Let stand at room temperature for 30 minutes.
- When finished marinating, transfer marinade to a small saucepan, and simmer for several minutes. Bring to boil over low heat, cook stirring constantly until lightly thickened.
- Preheat an outdoor grill for medium-high heat.
- Lightly oil grill grate. Cook salmon skewers on the preheated grill for 4-5 minutes per side, turning once and brushing often with raspberry marinade, or until fish flakes easily with a fork. Serve the grilled raspberry salmon hot.

- Place eggplants, red bell peppers, zucchinis and fresh mushrooms in a medium bowl.
- In a medium bowl, whisk together Sun Zen Olive Oil, lemon juice, basil and Sun Zen Rosemary & Garlic Herb Seasoning. Marry the vegetables with the marinade by pouring the mixture over the vegetables. Cover and marinate in the refrigerator at least 1 hour.
